Oh, we forgot - we fry the buckwheat ourselves, in our ovens. Then we immediately grind it in a millstone, and this fragrant flour is immediately added to the dough.
Ingredients according to DSTU 7517:2014: whole wheat flour, water, whole grain buckwheat flour, wheat sourdough, coriander, sea salt, baker's yeast (within 1-2 g per 1000 g of dough).
