Our Kalita is born just the way it was long ago at Andriyivski vechornytsi — traditional Ukrainian winter gatherings filled with songs, games, fortune-telling, and shared food — made from warmth, honey, and skilled hands.
The dough is mixed by our bakery artisans: flour, yeast, a touch of oil, and honey that brings a light caramel note. Then come the poppy seeds, walnuts, dark raisins, and ruby cranberries — small sweet sparks that brighten every bite.
The dough is shaped by hand — a round, sun-like, slightly austere Kalita, a symbol of the winter sun that is just about to return. Slow baking gives it a golden color and a tender honey–poppy aroma you can’t mistake for anything else.
The finished Kalita is crisp at the edges and soft inside, with bright sweet-tart notes of berries and the warmth of poppy and walnut.
This is more than a ceremonial bread — it’s the taste of Ukrainian winter, crafted by hand and carrying the spirit of ancient festive games.
